In honour of the humble sandwich, and of course, because it is Sandwich Week, we have taken the M&S BLT which has a whopping 462 calories and no less than 21g of fat and given it a Fitness4Less healthy eating makeover.
Presenting the delicious and more nutritious BLT4less!Recipe makes 1 round
You will need:
3 bacon medallions
1/2 avocado
1 tbsp 0% fat Greek yoghurt
Sea salt and black pepper
2 slices brown bread
2 vine tomatoes, sliced
A handful salad leaves
A few herb leaves like parsley, coriander or chervil
Method
- Grill the bacon until cooked, turning once and until it is a little crisp
- Whilst the bacon is cooking, mash the avocado then mix with the yoghurt. Season with black pepper and salt
- Spread the bread with the avocado mixture then top one piece with the tomatoes, leaves, herbs and lastly the bacon, finish with your second slice of bread.
- Cut in to half to serve - you’ve made a delicious sandwich with less than 350 calories and utilising much healthier fats.
NB. In case you are not a certified bacon expert, a ’bacon medallion’ is the eye piece of meat from a rasher of back bacon. You should be able to find these in most supermarkets or butchers; it’s a much leaner cut but still gives you the bacon fix!
